Another suitable class of anionic surfactants are the sulfated monoglycerides of the form R1CO???O???CH2-C(OH)H???CH2-O???SO3M, wherein R1 is a saturated or unsaturated, branched or unbranched alkyl group from about 8 to about 24 carbon atoms, and M is a water-soluble cation such as ammonium, sodium, potassium, magnesium, triethanolamine, diethanolamine and monoethanolamine.
