Ethnicity, for those of us who distinguish it from race, is a far more flexible concept free of the ontological preconceptions inherent in the notion of race, particularly the idea that it corresponds to a real biological division, and the related notion that humanity can somehow be broken down into a small number of distinct and disjoint races, each with a character stemming from biology.
