heat oil in large (and i do mean large) stock pot over medium high heat. saute onions 5 min. stir in remaining ingredients except bell pepper and parmesean cheese. bring to boil. reduce heat, cover and lightly boil until sweet potatoes are tender 12-15 minutes.adjust seasionings to taste. makes 8 3 cup servings. store in individual containers for up to 4 days in fridge or freeze. heat before servi
